Limestone Creek Pinot Noir 2008
From the team that brings you Greystone Wines. Proudly 100% Waipara Valley fruit. The developing style of this wine shows the trademark blackboy peach nose. The black fruit influence is extended on the palate to include cooked cherries and bitter chocolate, with hints of white pepper and a subtle smokiness. Think BBQ chef does dessert! The acid and tannin structure is designed to work with food including the wild pig, truffles and figs also found in this valley. Viticulturist's Notes: A mix of clones from five separate Pinot Noir blocks of varying sizes. Two blocks facing northwest on slopes allowing for good drainage and wind movement resulting in clean ripe fruit. The soils are predominantly wind blown loess over clay with limestone deposits under the higher blocks. All blocks are pruned to 2 cane VSP for low crop levels. Winemaker's Notes: The fruit was harvested when optimal ripeness for each clone was reached. Predominantly wild fermentations in small 1.8 T fermenters were used to showcase the vineyard terroir. All batches were hand plunged and left on skins until tannins were integrated and in harmony with the fruit flavours. After pressing this wine was aged with French oak for six months before final blending for our Limestone Creek label.
